Strawberry and Cream Icy Poles

You'll be in strawberry and cream heaven with these delicious icy poles. Dairy free, refined sugar free, gluten free and packed full of protein, these icy poles are the perfect post workout treat or mid afternoon snack on a hot summer's day. 
If you don't have any strawberries on hand, we can highly recommend using blueberries or raspberries or a combination of each. We used fresh strawberries, but frozen strawberries work just as well. If using frozen strawberries you might not need to add any extra water. Enjoy!
 
INGREDIENTS - makes 8 icy poles
500g fresh strawberries - washed, patted dry with paper towel, remove green tops and cut in half 
1/2 tablespoon maple syrup
2 tablespoon lemon juice
500g Natural Coconut Yoghurt 
2 bananas, peeled, sliced and frozen
2 scoops of VIVO Nue Au Naturel Alkaline Complete Protein or VIVO Nue Vanilla Creme Alkaline Complete Protein
1/2 cup coconut milk
METHOD
1. Add the strawberries, maple syrup and lemon juice to a small saucepan over low heat and stir gently. Allow the strawberries to simmer, breakdown and thicken - add a little water if necessary so the strawberries don't stick to the bottom of the saucepan. Stir well and remove from the heat. Allow to cool, place strawberry compote into a bowl, cover and place in the fridge to cool.
2. Meanwhile, to make the cream add the coconut yoghurt, bananas, protein powder and coconut milk to a high speed blender and blend until smooth and creamy. A little more coconut milk may be needed. 
3. Using a popsicle mould add 1-2 tablespoons of the cooled strawberry compote before adding the cream mixture and filling approximately halfway before adding another tablespoon of strawberry compote and then filling the mould with more cream mixture. Using a skewer gently mix the ingredients a little to get a strawberry swirl through the cream. Add a popstick. Repeat with the other moulds. Place in the freezer for at least six hours or overnight.
4. To remove the icy poles from the moulds, carefully run the moulds under warm water for a few seconds to loosen each icy pole. Place the frozen icy poles in a zip lock bag and enjoy as a post workout treat or as a delicious and healthy snack.
