Toasted Cinnamon Nutty Granola

This toasted cinnamon nutty granola is a tasty way to add protein into your fruity breakfast, and for me, I found it to be a great incentive to get more fruit into my diet. It’s a quick one to whip up, and the simple combination of flavours pairs easily with a wide variety of fruit, or even coconut yoghurt for a quick and healthy vegan parfait.

Ingredients

Serves 1

3 tbsp mixed raw nuts (almonds, hazelnuts, cashews, walnuts are all great options)

1 tbsp pepitas

1 tbsp sesame seeds

1 heaped tsp extra virgin coconut oil

1 tsp ground cinnamon

1 tsp rice malt syrup 

Directions

Roughly chop your mixed nuts using a large knife, add pepitas and sesame seeds to the pile (no need to chop these). Heat a frypan at medium high heat, add coconut oil and melt. When the pan and oil are nice and hot add the nuts and seeds to the pan with the cinnamon. Cook, mixing for 2-3 minutes. Add the honey and cook, stirring for 30 seconds. Add to a bowl of fresh fruit and/or coconut yoghurt.

My favourite combination is orange and banana, pineapple would be a good fruit to try with it too.
